MarkJego (winter aged) captures the complex flavors of a raw sheep’s milk cheese.  It is a manchego-style cheese.  The natural rind has a delicious hint of barnyard with a creamy nutty center.  While this cheese can be used for cooking, it stands out with a red wine and plane bread.

We name this cheese MarkJego after my border collie Mark John who helps move the sheep into the milking parlor.
