Meg’s Mountain is an alpine cheese aged for a year or more. Made when the sheep are eating fresh grass in the hills of our farm it’s flavor is subtle and clear. Think of Gruyer or Swiss cheese, but this sheep’s milk cheese has a underlying gentle creamy taste. It’s natural rind protects the cheese during the aging period while sealing in the creamy cheese body, creating a tasty wrapper. The aged cheese has a buttery texture with a nutty flavor enhanced by the natural rind. It goes well with a red wine.
We name this cheese Meg’s Mountain after Carolyn’s dog, Meg who is the protégé chief livestock dog on the farm.
