Description
A creamy smooth gouda-style cheese made with our raw sheep’s milk and aged with a natural rind. We wash the curds with cool water while making this cheese which takes away some of acid in the whey, leaving a silky smooth texture and creamy taste. This is a semi-hard cheese that can be enjoyed with wine, bread and your favorite fruits.
We named this cheese after Celia, our little border collie who is a retired herding dog and now enjoys her days relaxing here on the farm.
