Description
A manchego-style cheese made with our raw or pasteurized sheep’s milk and aged with a natural rind rubbed with olive oil. The snappy flavor of the rind complements the creamy and smooth cheese. It pairs nicely with a glass of wine. It also melts well and can be used in a variety of ways while cooking.
We name this cheese MarkJego after my border collie Mark John who helps move the sheep down from the pastures and into the milking parlor.
