Halloumi is a sheep’s milk cheese originally from Cyprus that you can cook on the grill or fry in a skittle. A cousin to feta cheese, halloumi can be grilled until it is golden brown and served on a salad.
My favorite halloumi recipe is to simply cube the cheese in 1/2″ cubes and grill or cook in olive oil until just golden. Then mix with chopped watermelon and fresh mint. Enjoy!
