Description
Rose’s Ridge is a semi-hard cheese made from our raw sheep milk. It is a little sharper than our Markjego and has the same natural rind on the outside. The natural rind adds a little extra flavor if you like it or you can cut it off the rind if you prefer the tangy center. The cheese has citrus overtones with a touch of dark wood. It can be eaten alone, with crackers, and melts well so can can be used in many recipes.
We name this cheese after Rose (pronounced “Rosa”) who is a border collie who lives in Texas. Her owner, Ken, helped me create this cheese so we honor his favorite dog by naming the cheese after her.
