Description
Rose’s Ridge is a semi-hard cheese made from our raw sheep milk. It is our own invention. Similar in tanginess to a white cheddar, it has an additional sweetness. The cheese has citrus overtones and a hint of tree fruit. It can be eaten alone, with crackers, and melts well so can can be used in many recipes. It is coated with wax rind colored “rose” with beet juice.
We name this cheese after Rose (pronounced “Rosa”) who is a border collie who lives in Texas. Her owner, Ken, helped me create this cheese so we honor his favorite dog by naming the cheese after her.
